I just finished Michael Pollen's book In Defense of Food. In it, he had some interesting comments about the "American Diet" and how we (or the government and FDA) define what food is. I learned a lot of interesting things in this book about where our food comes from. He recommends that we should, "Eat food. Not too much. And mostly plants." I love it. One of his suggestions was that you should not eat anything with more then 5 ingredients, anything with high fructose corn syrup or anything with ingredients that you cannot pronounce, or know what it is. It is pretty hard to do this, but i have decided that once i am done with the transplants that i am going to try it out for a bit. Here is a recipe for some DELICIOUS (almost sinful)brownies that are easy to make, don't require many ingredients and are actually good for you. Try it out and let me know how they are.

1.5 Cups grain sweetened, Dairy Free Chocolate Chips (i used 85% dark chocolate from Black and Green. You can also use Carob chips)
4 Organic Eggs
15oz. Chickpeas (if in a can, drained and rinsed)
3/4 cup Agave Nectar or 1/2 Cup Pure Maple Syrup
1/2 tsp. baking powder
Directions:
Preheat oven to 350 degrees. Melt
chocolate chips by heating water in a small pan and placing chips in a metal bowl and stacking it over the boiling water. Stir until melted. Blend eggs and chickpeas in a food processor or blender until smooth. Add melted chocolate, sweetener and baking powder and blend until smooth. Pour batter into a lightly oiled baking pan (8"x8") and bake for 35-40 minutes. Let it cool before you cut.
**ADDENDUM** These brownies were tested by my dad and Mr. Incog Nito....two men who love their chocolate. My dad enjoyed them BEFORE i told him what they were made of. Mr. Incog Nito enjoyed them before AND after i told him what they were made of...though he did make some comments about them being "too healthy."**
